Love Lives Here

We got a call yesterday for an impromptu dinner invite to the home of some now dear friends. Not being one to stray too far from a good meal, I have learned from the few previous times when I was blessed by their hospitality that this is one invitation not to pass up! The secret is excellence. Plain and simple. Love lives at that address and it makes a regular appearance in the form of food and fellowship severed generously at the Lombardo's.

I have asked them to become bloggers and to stop in and share the goodness of their kitchen. I have managed to beg a few recipes from the Lombardos and will get busy and post them. However, the real good stuff is yet to be revealed. This is a definite treat and the wonderful preparation of fine Italian delicacies from family recipes dating back generations should be shared with food enthusiasts everywhere. This is a gold mine folks and I hope that it will spark a mother load from others out there in the world.

Awesome Oriental Salad

1 Large head Napa cabbage ( 2.5 - 3 lbs) Sliced
1/4 cup super sweet onion
Set aside...

Topping -

Brown... stir constantly
1 stick of butter
2 packages crumbled Ramen noodles
1/2 cup raw black sesame seeds
1/2 cup slivered almonds

Set aside in separate bowl

Dressing...

1/2 cup sugar
1/2 cup white vinegar
1 cup Smart Balance oil
2 tbs soy sauce
2 Ramen seasoning packets

Hints

Keep ingredients separate until serving.
Heat butter to sizzling before adding dry ingredients.
Use Oriental or chicken flavor ramen.

Salsa Di Parmigiano...

1/2 lb Parmesan cheese
1/2 lb Asiago cheese
2 Tbs Chopped green onion
2 Tsp Garlic
2 Tsp Dried Oregano
1 Tsp Freshly ground pepper
1 Tsp Red pepper flakes
1 1/2 cups of extra virgin olive oil

Chop cheese into 1 inch chunks
Pulse in food processor until reduced to the size of pea gravel.
Transfer cheese to bowl and stir in garlic and onion.
Add oregano, red pepper and black pepper & olive oil.
Cover and let stand at room temperature for at least four hours.

*This is wonderful spread on toast points, crackers or a baguette.
Also good right out of the bowl!

I just received this from my cousin Nancy in Arizona.

Of course I would recommend that you use ORGANIC INGREDIENTS in this one and bathing your produce for 20 minutes in GRAPEFRUIT SEED EXTRACT & water (40 drops of G.S.E.) will kill off the micro bugs and vermin hitch hikers from the produce isle.

I am all over this one!


Jalapeno Chicken Salad (award winning!)

3 cups shredded cooked chicken (pulled apart into little pieces, instead of diced)
Juice of 1 lime
2/3 c. Mayonnaise
1/2 medium stalk celery, chopped fine * * GSE BATH
1/2 medium red onion, chopped fine
1/2 red bell pepper, seeded and chopped fine * * GSE BATH
2 Tbsp (or more) chopped fresh cilantro * * GSE BATH
1/4 c. Pickled jalapenos, chopped fine * * * GSE BATH
Salt and Pepper to taste

Mix Mayo and lime juice, and toss all remaining ingredients with it.

Serve in crisp tortilla bowls, or over bed of tortilla chips.
